My banana bread craze started over the pandemic and well, hasn't gone away! I have to say I really just knocked this one out of the park!
I know a lot of people are probably scratching their head over the dates but I promise you it is worth it. MUCH better than raisins. I had some requests on the recipe so here are all the ingredients needed! You can also completely bypass the walnuts and dates and just use chocolate chips :)
Ingredients:
3 ripe bananas (Medium/large)
1/2 cup butter (room temperature)
3/4 cup sugar
2 large eggs
1 1/2 cup flour
1 tsp baking soda
1/2 tsp salt
1/2 tsp vanilla extract
1/2 cup chopped dates (you can buy them whole and cut them in to small pieces - I recommend purchasing them already pitted)
1/2 cup crushed walnuts (optional: toast them before hand)
Instructions: (Let's keep this as simple as possible)
Preheat your oven to 350 degrees and grease a bread loaf pan. You can use a non-stick spray or butter and flour!
In a large mixing bowl, whisk all the ingredients together. I was trying to avoid washing a ton of dishes so I put it all in one instead of mixing the dry and wet and still came out perfect! (even saves time)
Pour into the loaf pan and top with more walnuts. Then bake for about an hour. I took mine out at about 54 minutes. Use a knife or tooth pick to test out the inside before removing!
Let it rest for 10 minutes before removing from the pan and then let it cool off on a rack before devouring!!!
