Easy Banana Muffin Recipe for Anyone

The fact that I have so much extra time during my day can become very dangerous! I start believing that I have time to try new things like workouts and... recipes! Yes, I am actually looking to spend more time in the kitchen. Yikes! I've been getting a little ahead of myself. However, for some reason, banana bread seems to be the go-to quarantine baked good? I get it - it's delicious! Not really the best for my health kick but bananas are kinda healthy, right? I guess I'll do it!

And so it begins. The quest for a banana bread recipe. I first realize I don't have many ingredients (no way I'm waiting on line for an hour just to get sour cream at Shop Rite) and I also realize I don't have a bread tin to make it!! (New house means no cooking equipment) Hold up! I have a muffin tin... easy! Banana muffins. Not just any banana muffins. The EASIEST banana muffin recipe I could make. You should have every single ingredient in your house at the moment. Here is what you need to start:

Dry ingredients:

1 1/2 cup all purpose flour

1 cup sugar ( I only used about 2/3 cup to save some calories. If your bananas are super ripe, they are will be enough to sweeten the muffins!)

1 tsp baking soda

1/2 tsp salt

Wet ingredients:

3 large bananas

1 egg

1/2 cup oil

1 tsp vanilla

Optional but like you need it:

1 cup chocolate chips

1/2 cup chopped walnuts

-Preheat your oven to 350 degrees, then pop it right in!

-It should take about 15-20 minutes depending on your oven. Mine was closer to 20 because it isn't that strong.

-Don't forget to spray your pan to avoid them sticking!! You can either coat the sides with butter and sift some flour through or keep it simple and use a baking spray!

I swear to you that if I can make these and have them come out fantastic, then so can you!!!
